Tagine of chicken and olives with preserved lemons
Serves five
INGREDIENTS
1.5kg whole chicken
1 tsp salt
1 tsp ground black pepper
125g stoned green olives
1.5 preserved lemons cut into strips
50g butter
2 tbsp olive oil
1 onion, finely chopped
3 cloves garlic, crushed
1 tsp ground ginger
1 tsp ground cumin (optional)
1 tsp turmeric (optional)
1 tsp cinnamon (or 3 cinnamon sticks)
Pinch of saffron threads
500ml water
3 tbsp fresh coriander, chopped
3 tbsp fresh flat-leaf parsley, chopped
